Ingredients

  • 1 serving (~148 g) Russet Potatoes
  • 1 tbsp (~31 g) Queso Blanco
  • 1 serving (~28 g) Mexican Style Shredded Cheese
  • 0.25 servings (~42.5 g) Nonfat Plain Greek Yogurt
  • 0.5 tbsps (~5 g) Cornstarch

Instructions

The strangest ingredient on this list, corn starch, is the most important. This is how you get the perfect ratio of crispiness.
1. Use a mandolin or handle slice a washed potato into chips. The main thing that can throw off the macros of this recipe is the potato size.
2. Take a microwave-safe bowl, add 5g of corn starch and about 1/3 cup of water.
3. Microwave the water and starch for 30 seconds, stir, repeat until you notice the material change. It should NOT turn fully into a slime-like material.
4. Mix the raw chips with the mix.
5. Space out your chips evenly, air fry or bake in the oven at 405 for 15-30 minutes depending on the size of your chips.
6. After it’s done, take out your chips, place them on a plate, and add your cheese and queso. Microwave for ~30 seconds
7. Optional - add 1/2 serving of nonfat greek yogurt as a sour cream replacement.
